How do I export a single sheet?
Pick the worksheet from the list before converting; only that sheet becomes a CSV file. Convert the other sheets one by one if you need them as well.
Are commas and quotes inside my data escaped?
Yes. Cells are quoted and inner quotes are doubled following RFC 4180, so a value like Smith, John does not split into two columns.
