An array of objects, an array of arrays, or a single object (treated as one row). Anything else cannot become a table and the tool says so instead of guessing.

Do I get one sheet or several?

JSON becomes one sheet. If you start from an .xlsx file instead, the workbook's own worksheets are what gets written back.
